Inside my kids’ lunch boxes you won’t find the typical packed lunch.  Here is what you might see.
·         Leftovers
·         Rolled lunch meat
·         Hard Boiled Eggs
·         Cheese sticks
·         Power Balls
·         1 -2 veggies
·         1 -2 fruits
·         Occasionally popcorn or chips
I try to have at least five different items in each lunch.

Leftover Chili with Fritos for dipping, two cuties, broccoli, cauliflower, and an apple.
Trailmix Recipe
2 cups Unsalted Roasted Peanuts
1 cup Cashews
1 cup Bittersweet Chocolate Chips ( I use Ghirardelli 60%)
1 cup dried fruit (Craisins or raisins)
Place all ingredients in a 1 gallon storage back.  Shake until well mixed.

Here I have homemade trail mix and Power Balls along with ham, fruit and veggies.
Power Ball Recipe
(Adapted from Smashed Peas & Carrots)
1 cup dry oatmeal
1/2 cup natural peanut butter
1/4 cup ground flaxseed
1/3 cup honey
1 tsp. pure vanialla extract
Stir all ingredients together in a bowl.  Allow to chill in refrigerator for about 1 hour.  Once chilled, roll into balls.  Store in airtight container for up to a week.
The great thing about this recipe is that you can modify it in many ways.  You can add coconut, chia seeds, or chocolate chips.  Other nut butters can be used if there are allergies to peanuts.

Applegate Turkey, cheese stick, apple, grapes, broccoli, and carrots/red peppers. One kid has a ranch dipping sauce.
